Has anyone else been getting concerned about the grocery stores’ inadequate supply of paper towels or toilet paper? In what feels like a hilarious twist, I embarked on a paper-making journey this week. And the product quite resembles toilet paper or paper towels…so, crisis averted.

Minimalist Avocado Toast
Three blog posts within a week! Well, if anything, Coronavirus certainly is improving my blog-writing tendencies. It is also making me extremely conscious of not eating too much. I am too scared to venture out to the grocery store! Takeout for us stopped a long time ago, too. So, that simply means I am thinking about snacks/meals that help me stay fuller longer, and this avocado toast is one of my go-to’s lately.

Three days of “quarantine,” where I didn’t really leave the house (except to go for walks). Three days that were perfectly busy — filled with work, planning, webinars, computer time, chores….
