A Breakfast Staple: Egg Bites

Would you believe me if I told you that before this year, I never had an egg in any other form other than scrambled eggs? I know that eggs pack a great punch of protein, but I have almost always skipped breakfast due to busy mornings. Not a great habit.

If I had time, I would always just make a coffee and * maybe * stop for a bagel at a drive-through. But in the spirit of cleaning up my act, and treating my body better, I decided to try something new. Earlier this year, I dared myself to try the egg bites on the various Starbucks, Dunkin, and Wawa menus. Now, I find myself opting for egg bites because they are endlessly customizable and packed with protein! Sure, they have lots of yummy cheese and bacon, but it’s better than nothing and they leave me feeling full for the morning.

Getting to-go egg bites can be pricey at $4-$5 per order, and I realized that they probably weren’t as healthy as I had thought. So, I decided to try my hand at making my own. There are so many recipes on Pinterest recommending different techniques, like recreating a sous vide method in the oven. Now that I have found some great recipes, I have been making my own in batches and popping them in the microwave on busy weekdays. Who am I?!

I’ve tried this exact recipe a few times and I find that it turns out best when I go heavier on the cottage cheese and cheddar cheese. Skimping on the cheese may cost you some flavor, but I do think it’s important to remember that the more cheese = more fat. There are lots of great substitutions, and add-ons, like spinach, red pepper, kale, or mushroom.

Another tip that I have read about is recreating a faux sous-vide method by putting the eggs in a steam bath during backing. Read more about this from this great blog post!

Another prep tip I can’t recommend enough — 1000000% recommend!!!! — is to use muffin or cupcake liners when you bake. I have almost ruined some of my muffin tins and spent so much time cleaning (and cursing) the mess. Even my tins that I have generously greased causes quite a mess. For the easiest post-baking procedure, I remove the liner right out of the oven (after about 1-2 minutes). They’ll be hot, so watch out. I would also recommend giving the liners a quick spray of olive oil spray before you fill them up. The clean up was effortless!
