Pumpkin Spice Mule Mocktail

Do you ever see a recipe that looks so good, but then you realize that in order to make it you almost always need a trip to the grocery store? I will admit, most of my mocktails are made with a little bit of planning and grocery list making. But…not this one! I whipped it up on a whim because I already had everything in my fridge and pantry! That NEVER happens! 😂 It was so delicious and took only a few minutes to make two drinks. Just a couple scoops of pumpkin purée, my favorite ginger beer, and a lime! The pumpkin flavor isn’t overpowering, and the ginger beer adds a nice little zip. I do love a Moscow mule any time of year, but something about the ‘ber months (September-December) makes them extra appealing.

Pumpkin Spice mule (non-alcoholic) | serves 2

  • 2 tablespoon pumpkin puree

  • Juice of 1 lime

  • 6.8 oz bottle of ginger beer (I prefer this brand)

  • cinnamon

  • pumpkin pie spice

  • vanilla extract

Combine all ingredients in a vessel and mix. Add about 4-5 drops of vanilla extract and a dash of pumpkin pie spice. Add ice, and garnish your glass with cinnamon. To make it boozy, add vodka (vanilla cream would be a good suggestion).

This drink’s pumpkin flavor is delicate, and balanced nicely with the spice of the ginger beer! I personally enjoy all things pumpkin flavored, so I feel like I could have used more than 2 tablespoons (my preference). That is probably what I will do next time!
